So I know that you all read my grand plan for freezer cooking last week. I think that I was a little ambitious with what I thought I could get done in the time I had available. I did not have any days that I could set aside to devote to cooking, and since I worked 3 days, had 3 volunteer commitments, 1 consignment sale to shop, and my husband was out of town for most of the week, getting much of anything completed in the kitchen just didn't happen.
I was able to make the baked mac&cheese, lasagna roll-ups, and taco meat and get those in the freezer, but the rest I haven't even attempted to tackle and its been more than a week. To be honest, I haven't even made it to the grocery store to get all of the ingredients I need! YIKES!
I am still hoping to get a few more things made and in the freezer this week. I am focusing on our breakfast items (Healthy Breakfast Cookies and Flax Seed Waffles) as well as a few more dinners. I'll keep you posted!
